Easy Baked Chicken

Those of you that know me know that I don't always follow recipes exactly.  I omit ingredients that I don't like, and add ingredients that I do like.  The recipe below originally came from a Betty Crocker cookbook, but I modified it slightly based on the ingredients I had in my cabinet.

Mix Bisquick, Italian Bread Crumbs, Salt, Pepper, and Paprika.  About a cup each of the Bisquick and Bread Crumbs, and about a tablespoon of paprika.

Melt butter and dip chicken in butter and then coat with mixture above.  Bake at 375 for about 40 minutes.

I thought this was really good.  The kids even like it!  If you don't like to cook with butter, you could probably use milk.

Enjoy! ◦

Restaurant.com

Have you heard of http://www.restaurant.com//? The site allows you to purchase $25 gift certificates for $10, and $10 gift certificates for $4 to be used at participating restaurants. They are currently offering an 80% discount (in addition to the regular discount price) on certificates. Just use discount code SANTA at checkout and you can get a $25 gift certificate for $2!!!!! This promotion code is only valid until 12/25, so don't wait!

I've had a few people email me to ask exactly how this works. It is best to think of the certificate as a coupon because a minimum purchase is required. It can vary by restaurant, but generally you can use a $25 certificate on a $35 purchase, which is a significant savings. Click here for FAQs.

**Disclaimer: You should call the restaurant ahead of time to make sure they accept the certificates before purchasing. ◦

Crock Pot Mac-N-Cheese

This isn't really a frugal recipe, but it is really good!  It is great for taking to pot lucks!

Makes 6 servings
8 oz. dry elbow macaroni, cooked
2 Tbsp. oil
13-oz can evaporated milk (fat free will work)
1 1/2 cups milk
1 tsp. salt
3 cups shredded Velveeta cheese
2-4 Tbsp. melted butter

In slow cooker, toss macaroni in oil. Stir in remaining ingredients. Cover. Cook on Low about 2 hours. I've found it works best when you cook the noodles until they are almost, but not completely, done. ◦

Garlic Chicken

I PROMISE that the garlic flavor is not overpowering. I can mix this up in about 10 minutes before work and it is ready when I get home. It is very good served over Lipton Chicken flavored noodles.

Chicken Breast or Tenders
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon olive oil
1 large onion, sliced
1 medium bulb garlic

In small bowl, combine salt, paprika, pepper and oil; mix to form paste. Spread evenly over uncooked chicken.

Place onion in 3 1/2-4 qt. slow cooker. Place chicken over onion. Separate garlic into cloves; do not peel cloves (NOTE: I buy the pre peeled cloves at Kroger and it works just fine). Place garlic cloves on and around chicken. Cover; cook on LOW for at least 7 hrs. or until chicken is fork-tender and juices run clear. ◦
